It is crucial to use the correct amout of leaves. For one cup, use roughly one level spoonful. For a stronger infusion, use a heaped spoonful. Boil fresh water and pour it immediately over the leaves. The ideal steeping time is between 2-4 minutes. Within the first 2-3 minutes the flavour unfolds itself. With longer steeping times, the leaves start to emit tannins, which have a relaxing effect, but they also mask the finer flavours and can make the tea taste more bitter.
