It is crucial to use the correct amount of leaves. Don’t use too much, since green tea can be spoiled simply by using too many leaves. The recommended amount for one cup is roughly one level spoonful, but it’s possible to use more or less depending on your personal preference.
The ideal brewing temperature lies between 80-90 °C, to preserve the goodness and the taste. In China, tea is „awakened“ by a quick first infusion. This gets poured away, before the actual infusion takes place. It’s possible to do multiple infusions with such a rich, energized tea. The ideal steeping time is between 1-3 minutes. For a very light tea, 10-30 seconds is plenty.
